This simple colourful salad is packed with probiotic power.
1/2 cup (125 mL) probiotic sauerkraut, drained
1 Tbsp (15 mL) fresh lemon juice
1/2 tsp (2 mL) extra-virgin olive oil
1 green onion, chopped
1/2 carrot, grated
Place sauerkraut in medium-sized bowl. Add remaining ingredients and mix. Serve immediately.
Serves 2.
