    These easy, yet elegant, handheld endive packages have all the flavours you need with salty bacon, sweet apple, fennel, and creamy beans, enfolded within and balanced by the bitterness of Belgian endive leaves.

    Stuffed Endive Leaves

      Ingredients

      • 1 tsp (5 mL) extra-virgin olive oil
      • 3/4 cup (180 mL) diced onion
      • 3/4 cup (180 mL) diced apple
      • 3/4 cup (180 mL) diced fennel
      • 3.5 oz (100 g) diced turkey bacon
      • 1 tsp (5 mL) fresh thyme
      • 14 oz (398 mL) can white cannellini beans, rinsed and drained
      • Salt and pepper, to taste
      • 20 Belgian endive leaves

      Directions

      In large saucepan over medium heat, add olive oil and sauté onion, apple, and fennel for about 5 minutes. Add turkey bacon and cook for approximately 10 minutes. Add in thyme and beans and cook for a few more minutes, until beans have warmed.

      Fill endive leaves with mixture and serve. Depending on the size of your endive leaves, you may have extra filling.
