    Rosy Coconut Detox Elixir

    Ingredients

    • 2 cups (500 mL) coconut water
    • 1 cup (250 mL) plain kefir
    • 1 very ripe pear, cored and diced
    • 1 small banana, peeled and sliced
    • 3 ice cubes, or more if desired
    • 1/2 cup (125 mL) peeled, grated raw beetroot
    • 1/4 cup (60 mL) chopped fennel bulb
    • 1/4 cup (60 mL) chopped mint leaves
    • 2 Tbsp (30 mL) flax oil
    • Thumb-sized piece gingerroot, peeled and minced
    • 2 Tbsp (30 mL) lime juice
    • Mint, lime slices, and toasted coconut, for garnish

    Directions

    Place all ingredients, except garnishes, in high-speed blender. Whirl on high until smooth and velvety. Divide among glasses. Garnish and serve.

    If a high-speed blender is not available, whirl in conventional blender or food processor and strain into serving glasses through cheesecloth or a nut milk bag.
