Ingredients
- 2 cups (500 mL) coconut water
- 1 cup (250 mL) plain kefir
- 1 very ripe pear, cored and diced
- 1 small banana, peeled and sliced
- 3 ice cubes, or more if desired
- 1/2 cup (125 mL) peeled, grated raw beetroot
- 1/4 cup (60 mL) chopped fennel bulb
- 1/4 cup (60 mL) chopped mint leaves
- 2 Tbsp (30 mL) flax oil
- Thumb-sized piece gingerroot, peeled and minced
- 2 Tbsp (30 mL) lime juice
- Mint, lime slices, and toasted coconut, for garnish

Directions

Place all ingredients, except garnishes, in high-speed blender. Whirl on high until smooth and velvety. Divide among glasses. Garnish and serve.

If a high-speed blender is not available, whirl in conventional blender or food processor and strain into serving glasses through cheesecloth or a nut milk bag.
