Pomegranate and Fennel Elixir

Ingredients

1/2 cup (125 mL) unsweetened pomegranate juice
1 Gala apple, cored
1/2 cup (125 mL) roughly chopped fennel bulb
2 Tbsp (30 mL) lime juice
Sparkling water

Directions

In blender, combine together all ingredients, except sparkling water, until smooth. Strain, discarding solids, and pour juice equally into 4 highball glasses filled with ice and top with sparkling water. Garnish with some pomegranate seeds, if desired. To make this a cocktail, add a shot of vodka.
