Tender, flaky salmon with an umami-rich glaze and perfectly charred broccolini make this a satisfying, wholesome dinner you won’t get enough of. Omega-3s from the salmon and nutrients from the broccolini work together in this sweet and savoury delight.
Looking to slightly zhuzh up the caramelized salmon? Add a dash of sesame oil to the glaze for a deep, nutty, ultra-aromatic finish that beautifully complements the rich miso and maple.
Preheat oven to 425 F (220 C). Line baking sheet with parchment paper.
In container large enough to hold salmon fillets in single layer, whisk together miso, maple syrup, 1 Tbsp (15 mL) olive oil, rice vinegar, and gingerroot. Add salmon fillets, coat on each side, and let marinate for 15 minutes as oven preheats.
Place marinated salmon on lined baking sheet and bake in preheated oven for 10 to 12 minutes, until cooked through and caramelized on top.
In large saucepan, heat 1 Tbsp (15 mL) olive oil over medium heat. Add garlic and broccolini, season with salt and pepper, and sauté for 5 to 7 minutes, until tender-crisp.
Plate salmon alongside garlic broccolini and drizzle any extra glaze overtop. Serve with a side of white rice, if desired.
