Simple syrup is a breeze to prepare. Dissolve two parts sugar in one part water for a sweetener in any cocktail.
2 dime-size slices of fresh ginger
1/2 oz (15 mL) simple syrup
1/2 oz (15 mL) pink grapefruit juice
1/2 oz (15 mL) lemon juice
2 dashes Angostura bitters
Ginger beer to top the glass
Muddle simple syrup and fresh ginger, add all other ingredients (except ginger beer), and shake hard. Double-strain into a cocktail tumbler glass filled with ice. Top with ginger beer. Garnish with orange zest and mint leaf.
Serves 1.
