Fennel Honey Soda

This icy-cold soda is a refreshing way to cool down on hot days—and a quick, no-churn alternative to a classic summer treat. Honey and fennel come together in a subtly sweet, lightly licorice-flavoured sip that’s as elegant as it is easy. It’s delicious any time of the day. Serve it as a midday refresher, a dinner party mocktail, or even a palate cleanser between scoops.

Ingredients
- 1/2 cup (125 mL) chopped fennel stems and fronds (more fronds to garnish, optional)
- 1/2 cup (125 mL) water
- 1/4 cup (60 mL) honey
- 4 cups (1 L) soda water

In small saucepan, combine chopped fennel stems and fronds, water, and honey. On medium heat, allow to simmer for 10 minutes. Remove from heat and set aside until cool, about 10 minutes. Strain and reserve.

Fill 4 glasses with crushed ice. To each glass add 1 1/2 Tbsp (22 mL) fennel honey syrup and fill with soda. Lightly stir and garnish with fennel fronds, if using,
