1/4 cup (60 ml) extra-virgin olive oil
1 onion, chopped
2 cloves garlic, minced
6 oz (170 ml) tomato paste, thinned with 1 1/2 Tbsp (22 ml) water
2 16 oz (500 ml) cans organic plum tomatoes, mashed, or 8 to 10 fresh ripe tomatoes
2 Tbsp (30 ml) dried oregano or 1/4 cup (60 ml) finely chopped fresh oregano
1 lb (500 g) lean organic ground beef, cooked and drained
Salt and freshly ground pepper
In a large heavy pot, heat oil gently over medium heat. Add onion, garlic, and tomato paste, stirring constantly for at least 10 minutes (do not scorch or sauce will be bitter).Add tomatoes, oregano, and ground beef and simmer one hour. Season to taste and serve over
