1 cup (250 ml) celery root, cut in matchstick sizes or grated coarsely
1 cup (250 ml) firm apples, unpeeled but cored and cut into matchstick-sized pieces or coarsely grated
1/2 cup (125 ml) coarsely chopped walnuts
1 cup (500 ml) kefir
1/2 Tbsp (8 ml) tamari sauce (soy sauce)
2 tsp (10 ml) honey
1/2 tsp (2 ml) spicy herbal salt
dash cayenne pepper (optional)
Gently fold tamari sauce, honey, herbal salt and cayenne pepper into kefir. Toss celery root, apples and walnuts in kefir dressing and refrigerate at least one hour to enhance the flavour.
