1/2 tsp (3 mL) olive oil
1 each, yellow, green, red pepper, finely diced and mixed together
1 Tbs (15 mL) shredded Monterey jack cheese
1 tsp (5 mL) freshly shredded Parmesan or Romano
Preheat oven to 400°F (225°C). Brush dough lightly with olive oil. Sprinkle half the Monterey jack cheese over pie. Arrange peppers on top. Add remainder of jack cheese. Sprinkle Parmesan on top. Cook for 20 minutes.
