1 bunch fresh spinach, trimmed and washed
3-4 cloves garlic, minced
2 Tbsp (30 mL) pine nuts
¼ tsp (1 mL) sea salt
¼ cup (125 mL) Omega Essential Balance
4 Tbsp (60 mL) parmesan or Romano cheese (optional)
Place spinach, garlic, pine nuts, salt and pepper in bowl of food processor. Gradually add oil; blend until consistency of thin mayonnaise. Can be stored frozen in small portions. Add cheese when ready to serve. Serve over salads or with pasta.
