This salad is bursting with nutrition! Raw spinach provides strength through its many valuable nutrients and high iron content and strawberries provide lots of vitamin C.
4 cups (1 kg) baby leaf spinach
2 cups (500 ml) fresh strawberries, hulled and quartered
2 cups (500 ml) teardrop or cherry tomatoes
1/2 cup (125 ml) roasted sliced almonds
sea salt and freshly ground pepper to taste
Dressing:
1/2 cup (125 ml) cold-pressed almond oil
2 Tbsp (30 ml) freshly squeezed lemon or lime juice
2 Tbsp (30 ml) unsweetened strawberry jam
1 Tbsp (15 ml) fresh tarragon, chopped
Toss all salad ingredients except almonds. Mix dressing ingredients, pour over salad and toss again. Divide into serving bowls, season and sprinkle with almonds.
