This spread is easy and delicious a hit with adults and children alike. Spread it liberally on your favourite whole grain bread and enjoy!
1 lb (500 g) spinach leaves
2 cloves garlic, minced
1 onion, chopped
2 Tbsp (30 ml) cold-pressed olive oil
2 Tbsp (30 ml) flax oil
1 1/2 cups (375 ml) kefir (or sour cream)
Pinch nutmeg
Sea salt and freshly ground pepper to taste
Blanch the spinach in boiling water for two minutes. Saut?arlic, onion and well-drained spinach in the olive oil for three minutes on low heat. Put saut? mixture and the rest of the ingredients into a blender and mix on pulse setting for a chunky spread.
