Shopska Salad
The name of this salad comes from its main ingredient, feta cheese. The name of this salad comes from its main ingredient, feta cheese. Without the feta, there is no “shopska” and you won’t experience the incredible taste.
2 medium salad potatoes
1/3 cup (83 mL) cold-pressed sunflower seed oil
1/4 cup (63 mL) white wine vinegar
1 tsp (5 mL) freshly squeezed lemon or lime juice
1 tsp (5 mL) dried mustard
1 large red bell pepper, cut in 1 inch (2.5 cm) diamond shapes
1 medium red onion, cut in 1 inch (2.5 cm) diamond shapes
1 large English cucumber, cut in 1 inch (2.5 cm) chunks
4 small firm tomatoes, cut in 1 inch (2.5 cm) chunks
2/3 cup (167 mL) cubed feta cheese
2 Tbsp (30 mL) chopped fresh parsley
Sea salt and freshly ground pepper to taste
Pell, boil and slice the potatoes. In a large bowl, add oil, vinegar, lemon juice and mustard. Whisk thoroughly until the mixture becomes emulsified. Add the ramaining ingradients and the potato and mix thoroughly. Serves two.
