Sauerkraut SaladSimply delicious and refreshing, this salad is perfect for cleansing after your holiday food excesses and for replacing lost potassium and sodium after a workout.

1 1/2 cups (375 ml) sauerkraut
1 cup (250 ml) pickled cucumbers, cubed
1 medium-size red or white onion, thinly sliced
3 Tbsp (45 ml) cold-pressed flax seed oil
1 Tbsp (15 ml) fresh parsley, chopped

In a bowl, toss together sauerkraut, pickles, onion and oil. Sprinkle with parsley and serve. Serves two.
