Simply wash berries if organic or soak or spray them with a biodegradable fruit wash and rinse if non-organic.
1 10-oz package (300 g) firm silken tofu
1 cup (250 ml) raspberries, fresh or frozen
2 Tbsp (60 ml) lemon juice
1/3 cup (80 ml) natural cane sugar such as Sucanat or Rapadura, or other sweetener
1/8 tsp (1 ml) sea salt
In a food processor or blender, place all ingredients and blend until completely smooth. Spoon into two bowls and chill before serving, at least one hour. Serves two.
