4 medium size red beets, finely grated
1 large carrot, finely grated
1 tbsp. horseradish, freshly ground
4 tbsp. sour cream or plain yogurt
1/2 tsp. herbal salt
Mix all ingredients and serve immediately as an appetizer before a meal or as a side dish with roasted chestnuts or potatoes (any style).
