Quark Mayonnaise

Quark Mayonnaise1 cup (250 ml) quark
1 medium onion, finely diced
1/4 cup (60 ml) finely chopped mixed fresh herbs such as chives, parsley, basil, etc.
2 Tbsp (30 ml) flax, hemp or sunflower seed oil
2 tsp (10 ml) curry powder
1 tsp (5 ml) garlic powder
Dash of each dried herb: thyme, coriander and nutmeg
1/2 tsp (2 ml) herbal salt, such as Spike or Herbamare
1 tsp (5 ml) soy sauce

Mix all ingredients to a smooth mayonnaise using some whey or milk if necessary.

Season to taste and serve over boiled or baked potatoes or serve as a vegetable dip.

Refrigerated, this mayonnaise will keep for several days. Serves two.

Quark makes a tasty bread spread if mixed with honey or sugar beet syrup, or a savoury spread if mixed with minced garlic and herbal salt. Try a dip made with quark, grated fresh horseradish, flax oil and herbal salt. Delicious!
