Quark and Berries in Season

1 cup (250 ml) quark
1 tsp (5 ml) pure vanilla extract
1 Tbsp (15 ml) honey
1/2 cup (125 ml) each of raspberries and red or black currants

Mix quark, vanilla extract and honey. In parfait glasses layer berries and quark, ending with a layer of quark. Top with a raspberry and refrigerate for at least half an hour before serving.

As a variation, try combining strawberries and kiwi fruit.
