I love to combine seasonal fruits like pears with something a little exotic and unexpected such as cool and crispy grapes. Top it with a tangy dressing that really spices up the fruit and you've got a salad you can serve on its own or with crisp romaine lettuce. Basil and grapes are usually available year-round at your supermarket.
4 Bartlett pears, diced or sliced
2 cups (500 mL) red or green seedless grapes, well washed
1 Tbsp (15 mL) extra-virgin olive oil
1 Tbsp (15 mL) rice wine vinegar
2 Tbsp (30 mL) fresh sweet basil, finely chopped
Romaine lettuce (optional)
In a small bowl, whisk together olive oil, vinegar, and basil. In a large salad bowl, gently mix together fruit together and pour dressing over. Toss to coat well. Serve on romaine lettuce if desired. Serves 4.
