Nutty Carob Squares

1/2 cup (125 ml) ground almonds or cashews
1/2 cup (125 ml) ground walnuts, pecans or sunflower seeds
1/2 cup (125 ml) carob or cocoa powder
1/2 cup (125 ml) honey or maple syrup
1 cup (250 ml) chopped nuts and/or carob or chocolate chips
dried coconut or sesame seeds

Mix the ground nuts and carob or cocoa powder together. Stir in the sweetener to make a stiff mixture. Work in the nuts and/or chips, using your hands if desired. Press the mixture into a lightly oiled pie-plate or square pan and press flat.

Sprinkle the top with coconut or sesame seeds and press them slightly into the top of the mixture. Chill thoroughly. Cut into squares or bars with a table knife and wrap for traveling. Keep out of direct sun. Best to wrap in wax paper, then foil, then in a towel or cloth for travel in a backpack.

Keeps several days and up to a week on the trail.
