In the winter when your energy is low, a refreshing wholesome breakfast is the best way to jumpstart your morning and energize you throughout the day. Soak the cereal first thing in the morning, before you shower and dress, and your breakfast will be ready to go whenever you are.

Jumpstart BreakfastIn the winter when your energy is low, a refreshing wholesome breakfast is the best way to jumpstart your morning and energize you throughout the day. Soak the cereal first thing in the morning, before you shower and dress, and your breakfast will be ready to go whenever you are.

1 cup (250 ml) kefir
1 cup (250 ml) cottage cheese
1 Tbsp (15 ml) flax seed oil
2 tsp (10 ml) fresh lemon juice
2 Tbsp (30 ml) honey
2 cups (500 ml) peach comp?
1/4 cup (60 ml) pumpkin seeds

Pour one cup (250 ml) of boiling water over cereal and let soak for one to two hours. Drain cereal. Combine kefir, cottage cheese, flax seed oil, lemon juice and honey. Stir in cereal and peach comp?then sprinkle with pumpkin seeds and enjoy every bit of it.

*Peach C?te
Organic peach comp?(stored in jars is best) is sold in health food stores, but you can also make it at home. Peel and pit four peaches then drop them in boiling water with one teaspoon (five ml) lemon juice and one tablespoon (10 ml) honey. Cook for three to four minutes, then transfer to a screw-top jar. Store in the fridge for up to three months.
