Experiment with two or three herbs that have compatible flavours and complement each other visually. Or, use just one herb such as chives, mint or lavender for its special flavour.

1 bottle white wine vinegar
Several sprigs dill (with blossoms)
Several sprigs basil
Several sprigs salad burnet

Select a clear glass bottle with a cork. Wash herbs thoroughly and dry completely. Place herbs in the bottle with room to move freely. Add vinegar then put the cork in the bottle. Steep for at least two to three weeks. Steeping time varies with the intensity of the herb and may last up to several months.
