Greens with Dried Fruit and Coconut

The oil in coconut is a healthy fat. You need healthy fats to produce energy for the entire body to function.

3 cups (750 mL) organic mixed greens
1 cup (250 mL) fresh shaved coconut
1 cup (250 mL) mixed dehydrated fruit of your choice (apricots, prunes, sliced apple)

Dressing:
2 Tbsp (30 mL) coconut milk
1 tsp (5 mL) honey
1 tsp (5 mL) freshly squeezed lemon juice
4 Tbsp (60 mL) cold-pressed hazel nut oil

Whisk together dressing ingredients and toss with the mixed greens. Place the greens in the center of plates and surround with fruit. Garnish with shaved coconut. Serves 2
