Kids need extra protein and good fats, but it's hard to get them to sit still long enough to eat them. This tofu dip can be used to add readily digestible protein, and the nuts provide essential fats to boost immunity. Fruit also provides immune-boosting carotenes and vitamin C.
1 package (300 g) soft tofu
1/2 tsp (2ml) cinnamon
1/4 cup (60 ml) maple syrup or honey, to taste
Assorted fruits, cut into 1-2 inch pieces
1/2 cup (125 ml) fresh almonds, walnuts or pecans, ground
1/4 cup (60 ml) unsweetened coconut flakes
Blend the tofu, cinnamon and maple syrup. Serve in a bowl. Mix together the ground nuts and coconut and place on a flat plate. Lay out a tablecloth or use an area where some mess can be made! Take a piece of fruit, dip it in the tofu mixture and then roll it in the nuts. Enjoy. Serves eight.
