Carrot Muesli

Muesli is a fresh and satisfying way to start your day. It's best to freshly roll (or coarsely grind in a coffee grinder) raw oats in the morning AND then let them soak while you get dressed. Serves two.

Carrot Muesli Muesli is a fresh and satisfying way to start your day. It's best to freshly roll (or coarsely grind in a coffee grinder) raw oats in the morning AND then let them soak while you get dressed.

1/2 cup (125 ml) oat flakes
1/4 cup (60 ml) cold water
1/2 cup (125 ml) yogurt or almond milk
1 Tbsp (15 ml) flax seeds, freshly ground
1 tsp (5 ml) unpasteurized honey
1/2 tsp (2 ml) anise, ground
1 medium carrot
2 ripe apples
2-3 Tbsp (30-45 ml) hazelnuts, freshly chopped

In a bowl, soak oat flakes in cold water for 15 to 30 minutes. In a separate bowl, combine yogurt (or almond milk), flax seed, honey and anise. Grate carrots (finely) and apples (coarsely) into the mixture then add oat flakes and mix thoroughly. Sprinkle with hazelnuts and serve. Serves two.
