Pineapple is high in carbohydrates and fibre. Fresh pineapple contains the enzyme bromelain, which aids digestion.
2 cups (500 mL) fresh pineapple, cut in 1 inch (2.5 cm) chunks
2 cups (500 mL) broccoli florets
1 cup (250 mL) cherry or teardrop tomatoes
1 Tbsp (15 mL) toasted sesame seeds
Honey-ginger Dressing:
2 Tbsp (30 mL) honey
2 tsp (10 mL) chopped fresh ginger
1 1/2 Tbsp (23 mL) freshly squeezed lemon juice
1/4 cup (62 mL) cold-pressed flax seed oil or extra-virgin olive oil
2 Tbsp (30 mL) water
In a large bowl, whisk together dressing ingredients. Add pineapple, broccoli and tomatoes and toss thoroughly. Garnish with sesame seeds and serve immediately. Serves 2
