Blue Cheese Baguette This is a delicious yet simple recipe you can prepare ahead of time. It's a great finger food and a wonderful marriage of flavours.

2 large Juno apples, sliced 1/4-inch (5 mm) thick
2 Tbsp (30 ml) extra-virgin olive oil
1 large whole-wheat baguette, sliced diagonally
8-10 oz (300 g) Roquefort or Gorgonzola blue cheese, sliced
Fresh mint or sage, for garnish
3 Tbsp (45 ml) pecan nuts, roasted and crumbled (optional)

Brush apple slices with one tablespoon (15 ml) of oil and roast briefly in a pan until golden brown.

Brush baguette slices with one tablespoon (15 ml) of oil and broil in the oven for three to four minutes until crisp and golden brown.

Remove baguette from oven. Layer with blue cheese and apple. Crumble pecan over top, garnish with mint and serve.
