1 onion, diced
1 large carrot, diced
1 large stalk of celery, diced
1 cup (250 mL) mushrooms, sliced
1/2 green pepper, sliced
2 garlic cloves, minced
1 5.5 oz (156-mL) can tomato paste
2 large tomatoes, diced
1 14-oz (454-mL) can kidney beans, drained and rinsed
1 14-oz (454-mL) can garbanzo beans, drained and rinsed
1 tsp (5 mL) ground cumin
1 1/2 tsp (7 mL) chili powder
1/2 tsp (2 mL) pepper
1/4 tsp (1 mL) sea salt
1 cup (250 mL) water
1 12-oz (340-gram) package soy ground round (optional)
Lightly oil a medium skillet and saut?nion, carrot, celery, mushrooms, peppers, and garlic until onion is transparent. Add tomato paste, tomatoes, beans, and seasonings. Cover and simmer 40 minutes, adding water to keep moist. If using soy ground round, add after 35 minutes and heat thoroughly for 5 minutes. Serves 8.
