1 tbsp. olive oil
1 large onion, finely chopped
2 cloves garlic, crushed
6 large, ripe tomatoes, cored and cubed
3 tbsp. tomato paste
1 tsp. oregano
1 tbsp. fresh basil, finely chopped or 1 tsp. dried
1 tsp. vegetable bouillon powder
dash of freshly ground black pepper
In a large frying pan, heat oil and fry onions and garlic until golden. Add other ingredients and simmer for 30 minutes or until mixture starts to thicken. Serve hot with freshly cooked pasta or let cool off and spread on pizza as a tomato base.
