2 tomatoes, washed and cut in half with flesh removed
1 avocado
1/2 cup (125 ml) quark
1/2 tsp (2 ml) mustard
1 tsp (5 ml) fresh borage, chopped
Dash of herbal salt to season
Salad leaves to garnish
Turn tomato halves upside down to drip dry. Mix other ingredients to a smooth cream.
Fill tomato halves with avocado quark and set on salad leaves to garnish.
