For a cooling summer drink, there’s no substitute for mango, which will give you the smoothest, fluffiest blender drink you’ve ever made. If you use whole milk, you’ll never want to buy ice cream again! The technique here is similar to the way rich ice cream is made but is a much healthier alternative. Serves one to two.
- 1 large, ripe mango, peeled and pitted
- 1 Tbsp (15 ml) coconut oil
- 1 pkg. tropical fruit, vanilla or strawberry meal replacement or whey powder
- 1/2 tsp (2 ml) unpasteurized honey
- pinch sea salt 1 1/4 cups (310 ml) water or whole milk
- 12-24 ice cubes, to taste
- 1 tsp (5 ml) ground cinnamon
- 1-2 Tbsp (15-30 ml) freshly ground flaxseed mealm (optional)
Add one to two trays of ice, a few pieces at a time, and a dash of water as needed. Blend until smooth. If there is too much to blend properly, pour some out into a glass before adding all the ice and blend in two batches.
