Meatless Monday: 5 Father's Day Recipes

Father’s Day is Sunday, June 15! Celebrate by making Dad a hearty meal that’s sure to please vegetarians and meat eaters alike.

Men have a reputation for favouring meat-and-potatoes fare, but more and more guys are jumping on the meatless bandwagon. Take my dad, for example: once a devoted lover of steak and beef burgers, he now eats a mostly vegetarian diet. On occasion, he’ll even give tofu a try.

Father’s Day is Sunday, June 15. Why not treat Dad to a healthy vegetarian meal that even the most meat-inclined members of the family will love? The following recipes favour heartiness over delicacy and flavour over presentation, so no one will miss the meat.

1. Braised Vegetables Pot Pie with Cheddar Biscuits

Pot pies are the ultimate comfort food. Here, a biscuit topping made with cheddar cheese and buttermilk (and love!) tastes as indulgent as you’d expect. Dad can also feel good knowing that this pot pie comes with a healthy helping of veggies such as carrots, turnips, and potatoes.

2. Black Bean Beer Chili

Beer and chili? Not my cup of tea, but my dad would be all over a meal that boasts two of his favourite flavours. Avocado and corn also add pops of colour to this feisty and filling chili.

3. Grilled Portobello Mushrooms on Toasted Rye with Avocado Salsa

Time to get out the grill! These burgers are the perfect way to welcome summer.  Better-for-you Portobello mushrooms taste as tender and juicy as beef burgers, especially when grilled and topped with a garlicky salsa.

4. Tex-Mex Pizza

Who can say no to pizza? This one tastes just like a quesadilla, with a fiery mole sauce and tasty toppings such as avocado and two types of cheese. Pinto beans add texture and ensure that no one will be asking, “Where’s the pepperoni?”

5. Double Chocolate Stout Brownies

Fudgy and moist, this dessert is brownie bliss. Show Dad how much you care with a sweet treat that’s not too sweet, thanks to the inspired addition of stout beer.
