Besides their high fibre content and thus ability to lower bad cholesterol, green veggies have yet another benefit to brag about. A recent study showed that green veggies, such as bok choy, broccoli, and Brussels sprouts, may have the ability to boost immunity.
According to the study, a compound in the veggies ensures that immune cells found in the gut function optimally. These cells, intra-epithelial lymphocytes (or IELs for short), protect inner and outer body surfaces, defending against infection and acting as a first line of defense.
To boost your immune system, eat more of the following green vegetables:
- broccoli
- Brussels sprouts (see the Mediterranean Sauté)
- bok choy
- kale
- collard greens (try the Curried Collard Greens and Sweet Potato)
- watercress
- cabbage
- arugula
