You can make this completely vegetarian or with cooked, organic chicken breast and/or seafood. You can also vary the vegetables with your favorites.

1 head of broccoli, florets cut into small pieces
1 red pepper, cut into lengthwise strips
1/2 onion, sliced
1 can baby asian corn, drained
1 cup snow peas
1 package tofu (medium firmness), cubed
1/3 cup light soy sauce
1 cup vegetable or chicken broth
1 T. cornstarch
1 tsp. salt
1 tsp. sesame oil
1/4 cup water
4 T. oil
1 T. toasted sesame seeds (optional)

Sprinkle the tofu with salt and brown the tofu in a frying pan with 2 T. of oil. Steam the broccoli in another pot in some water and drain when the florets are tender. Set aside the tofu and the broccoli when done. In the same pan used for the tofu, add remaining oil and add all of the vegetables using high heat. Add broccoli, tofu, soy sauce, and broth. Combine water and cornstarch and add to the pan. Cook for another minute until the sauce has slightly thickened. Add sesame oil. Garnish with toasted sesame seeds.

Serve with brown rice. Serves 4.

Stir fry is probably one of the easiest and quickest things a person can make. Throw everything you like in a pan with a good sauce. Never put sesame seeds in my stir fry. I usually go to an asian market and get sweet sauces instead of regular soy sauce.

I love making stir fry... its so yummy and easy.
I usually make mine with fresh veggies (snow peas, mushrooms, onions, corn, broccoli etc) and chicken and I switch up the sauces to make it more interesting. I love it with terryaki, soy and even curry :)
